Apple Pie Oatmeal Bake
A healthy apple and spice oatmeal recipe that can be easily prepped for a week of ready-to-eat breakfast or served up for family brunch. Flaxseed adds extra fiber and Omega 3 fatty acids. Eggs, pecans and a protein boost help make this a more balanced, nourishing meal than your average bowl of oats.
Apple Pie Oatmeal
2 cups unsweetened almond milk
2 eggs
1 tsp vanilla
2 cups old fashioned rolled oats
¼ c vanilla protein or unflavored collagen peptides
2 tbsps ground flaxmeal
1 tbsp brown sugar
1 tsp baking powder
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
Pecan Topping
2 tbsp butter or coconut oil
2 tbsp maple syrup
3 tbsp brown sugar
1 c chopped pecans
Make It
Preheat oven to 350’ F.
In a large bowl, whisk the milk, eggs and vanilla.
Add the remaining dry ingredients for the oatmeal and mix well.
Spray the sides of a 9-inch baking dish with coconut oil and then pour the prepared mixture in.
Bake for 15 minutes.
Meanwhile, prepare the pecan topping.
In a saucepan melt the butter or coconut oil and then add the maple syrup and brown sugar.
Once it has thickened, 1-2 minutes, add the chopped pecans.
Bring it together
Once the oatmeal has baked for the first 15 minutes remove from the oven and spread the pecan mixture over the top.
Return to the oven and bake an additional 15-20 minutes.
Remove from the oven and let cool about 10 minutes.
I love it served warm.
Baked oatmeal can be kept in the refrigerator for 5 days.
